
Chamomile Popsicles
These are sweet, creamy, and bound to calm even the littlest of humans.
Ingredients
- 2 tbls Dried Chamomile
- 1 tbls Dried Hibiscus
- 3-4 tbls Honey* *Honey is not recommended for children under the age of two. You can sub with your favorite sweetener or with sugar.
- 1 tbls Lemon Juice
- 1 cup Plant-based Yogurt
- Pinch of salt
Instructions
- Bring 1 1/4 cup of water to a boil. Add chamomile and hibiscus to a mug. Once water is boiling, pour over chamomile and hibiscus. Let steep for 10 minutes.
- After 10 minutes, strain herbs into a bowl. While still hot, add honey (or sugar, see note) until well combined. Taste. You will want this to be fairly sweet since it will be combined with yogurt. Add more honey if needed.
- Add salt and lemon juice and stir well. Let cool for about 5 minutes.
- Add in yogurt and stir well making sure yogurt and tea mixture is fully combined.
- Pour into popsicle molds, insert sticks and freeze until fully hard. Waiting is the hardest part! It will take a few hours.
- Once fully hardened, take out and Enjoy! These will last up to a week before freezer burn starts to appear.
